The Four Fundamentals of Espresso
Proportion
The proper proportion of espresso is 14 grams of espresso for a double shot. For brewed coffee we use ¼ lb, or 4-4.5 oz of ground coffee for air pot brewers.
Grind
The degree of grind will vary from day to day, but it is important to learn how to judge your grind in order to achieve the perfect shot.
Water
Water is 98% of a basic coffee beverage. Because water plays such an important roll, Joffrey’s uses filter and water softener systems in all of its locations.
Freshness
Coffee is delivered to our stores within 48 hours of roasting.
