The Espresso Machine

BASIC OPERATING PRINCIPLES OF THE ESPRESSO BREWING EQUIPMENT
  • Water is held in the machine’s boiler at approximately 212º to 218º.  This water is used for steam.  The boiler stays half full so that steam can build up.  There is usually a window that shows the water level.  The boiler cannot be more than half full or it will not operate properly.
  • The water is heated by tubes called heat exchangers.  They are about one inch in diameter.
  • The actual brewing water is tapped locally but is run through a water conditioner and filter.  The pure water is necessary not only for brewing but also for keeping the machine clean and in good working order.
  • The water source is connected to a pump that forces the water through the heat exchangers and out through the group heads.
  • Thermostats keep the water at a constant level, hot enough to steam milk and produce good espresso.
  • To ensure maximum performance of your machine, and the most flavorful espresso beverages, it is necessary to clean the porta filter after every shot you pull.
