Organic Colombian Coffee
"Mesa de los Santos" is
produced in the eastern part of Colombian the town of Los Santos.
The Columbian organic coffee is shade
grown, fair trade, and bird friendly (Smithsonian certified), and certified by
Bio-Latina. The coffee has a floral aroma, is full bodied, and has a nutty,
well balanced taste with excellent acidity for a Colombian coffee. Order

Organic Costa Rican La Amistad Coffee
This large
family owned estate is located in the extreme south of Costa Rica, located on
the mountainside over 3,900 feet above sea level. Clear, fresh water that runs
from the rain forest to the farm is used for mill's washing process, and then
sun dried on cement patios. It has medium acidity with full body and flavor,
and has a unique complex, wonderful aroma; with a delicious citrus note finish
to this organic coffee. Order

Organic Guatemalan Coffee
This coffee
is from the Huehuetenango region located on the pacific slopes of Southwestern Guatemala. Wenty farmers founded the Co-Op
in 1989, and have grown 711 members. The organic coffee beans are grown at an altitude
between 3,900 feet and 5,250 feet above sea level. It is handpicked, prepared
using the wet method and sun dried. It is well-balanced, medium body with a
pronounced acidity with delightful smoky overtones in the cup, and a hint of
chocolate in the finish. Order

Organic Honduran Coffee
Grown in
the Southwestern region of Honduras in the department of La Paz, which is
located in the Cordillera de Montecillos which is blessed with optimal
land-ecological conditions for the production of fine coffees, this organic coffee
is grown in mountains ranging in altitude from 4,250 to 5,250 feet above sea
level. This shade grown organic coffee exhibits outstanding cup characteristics
and is sure to satisfy the most demanding taste buds. Expect a fresh organic coffee with good acidity, with sweet citrus notes, and a smooth
creamy chocolate body.Order

Organic Mexican Coffee
This organic coffee bean is grown in the
state of Oaxaco in southern Mexico. It is classified as an Altura, and grown at
an altitude greater than 3,900 feet above sea level. It is handpicked, prepared
using the wet method and is sun dried. The coffee is shade grown, bird friendly
and certified by OCIA. It produces a well-rounded cup, with just the right
amount of acidity to match the medium body, with surprise “sweetness” in the
cup and a very clean, smooth finish. Order

WHAT IS ORGANIC?
The National Organic Standards Board Definition of
"Organic"
The following definition of "organic"
was passed by the NOSB at its April 1995 meeting in Orlando, FL.
"Organic agriculture is an ecological
production management system that promotes and enhances biodiversity,
biological cycles and soil biological activity. It is based on minimal use of
off-farm inputs and on management practices that restore, maintain and enhance
ecological harmony.
'Organic' is a labeling term that denotes products
produced under the authority of the Organic Foods Production Act. The principal
guidelines for organic production are to use materials and practices that
enhance the ecological balance of natural systems and that integrate the parts
of the farming system into an ecological whole.
Organic agriculture practices cannot ensure that
products are completely free of residues; however, methods are used to minimize
pollution from air, soil and water.
Organic food handlers, processors and retailers
adhere to standards that maintain the integrity of organic agricultural
products. The primary goal of organic agriculture is to optimize the health and
productivity of interdependent communities of soil life, plants, animals and
people."
