GRINDING
Never cross contaminate grinders by grinding flavored coffees in the grinder marked for regular coffee!
The grind is the final process before brewing. The degree of grind will influence the degree of flavors extracted in the brewing process. The grind size also determines the type of beverage that will be prepared and/or the equipment that will be used.
Espresso is ground to a fine powder with a slight grittiness. There is no precise method for determining the correct degree of grind because it varies with each machine. Do not be surprised if you have to adjust the settings several times each day. Be sure to listen for the grinding burrs to click into place. You can judge correctness of the grind by the amount of time required to prepare a shot. It should take 18-25 seconds. Adjust the grind whenever and as often as necessary. The coarser the grind, the faster the flow; the finer the grind, the slower the flow. Product should be use within 15 minutes of grinding.
