Espresso
Espresso is a beverage brewed by forcing hot, but not boiling, purified water under 9-10 atmospheres of pressure through 14 grams of fine grounded coffee with an extraction time of 18-24 seconds. It was invented in Italy since the beginning of the 20th century, but up until the mid 1940s it was a beverage produced solely with steam pressure. The invention of the spring piston lever machine and its subsequent commercial success changed espresso into the beverage we know of today.
The word espresso is derived from the Italian word for express or fast, since espresso is made for and served immediately to the customer. The espresso should drip out of the portafilter like honey, have a reddish-brown color, and crema.
