The pour should take 18-25 seconds
21 seconds is perfect

A shot should display at least 1/8 inch of crema when completed.  Experts consider the crema, a golden, hazelnut froth on top of the beverage, as a sign of quality.  It will be and indication to you that the drink is well made.  If there is too much espresso in the porta filter, the color of the crema will be unusually dark.  If there is too little espresso in the porta filter, the crema will be too thin.
The shot should be served or blended within 20 seconds.
 
FACTORS THAT CONTRIBUTE TO A PERFECT SHOT OF ESPRESSO
Dose 14 grams of freshly ground espresso.
Grind fine grounds
Tamp tamp with 50 lbs. pressure
Weather heat or cold weather affects the freshness of the coffee beans.
